What We Actually Mean by a Light Meal

A light meal is not a synonym for a salad, and it is not a synonym for diet food either. On this site it means a composed plate — a grain, a protein and a lot of vegetables — that lands in a sensible calorie range, is cooked with restraint, and still tastes like something you would choose to eat again.

That last part matters more than it sounds. Most light eating fails on boredom rather than on willpower, and the Chinese kitchen has an unusually deep set of answers to boredom: steaming instead of frying, aroma instead of fat, soup instead of sauce, tea instead of dessert.

国潮 (guochao, “national trend”) is the word for the current revival of Chinese domestic food culture. Applied to food, it means looking back at the tradition on its own terms, instead of translating Western healthy eating into Chinese ingredients.

Four Ideas That Change How You Cook

If you take nothing else from this site, take these. They do more for a week of light eating than any single recipe.

Steam before you fry

Steaming keeps an ingredient’s own flavour and needs no oil to work. Most of the bowls here are steamed first; fat is added at the end, deliberately, if it is added at all.

Cook the flavour in

Ginger, spring onion, vinegar and white pepper build a dish from the inside. A light plate tastes seasoned because the seasoning went in during cooking — not because a sauce was poured over the top.

Build the bowl, not the dish

A grain, a protein and two or three vegetables, assembled. It is the most reliable way to hit a calorie number you can actually repeat on a Tuesday.

Count the week, not the meal

One meal rarely decides anything. Aim at a weekly line and let the individual days move around it. This is what makes the whole thing survivable.

Starting Your First Week

Pick three vegetables you already like

No exotic shopping list. Bok choy, mushrooms and tomato will carry a week of bowls on their own.

Set one protein at every meal

Eggs, tofu, chicken, prawns. Roughly a palm-sized portion — it is the part that stops you snacking an hour later.

Swap one fried dish a day

Steam or braise instead, and do it for the dishes you eat most often rather than the ones you eat rarely. That is where the calories actually are.

Finish with tea, not dessert

The cheapest habit change on the list, and the easiest one to keep.
