Step by Step

How to make it

A No-Cook Miso Muhammara - Roast and cool the peppers
1

Roast and cool the peppers

Char 3 red bell peppers until the skins blacken, then steam them in a covered bowl and peel. Roasting gives the deep sweetness that makes muhammara taste like more than a dip, and it is the only heat involved in the whole recipe.

A No-Cook Miso Muhammara - Toast the walnuts
2

Toast the walnuts

Toast 60 g walnuts in a dry pan until fragrant, then cool. Toasting wakes up the oils so the dip has a rounded, nutty base instead of a raw bite.

A No-Cook Miso Muhammara - Blend the base
3

Blend the base

In a food processor, blend the peeled peppers, walnuts, 1 tbsp white miso, 1 tbsp pomegranate molasses, 1 clove garlic and a squeeze of lemon until smooth. The miso replaces part of the sweet-and-oil load with fermented umami.

A No-Cook Miso Muhammara - Season and loosen
4

Season and loosen

Add 1-2 tbsp olive oil and a little breadcrumb to reach a spreadable, scoopable texture, then taste for salt and lemon. A spoonful of breadcrumb keeps it from turning into a slurry without adding cream.

A No-Cook Miso Muhammara - Swirl and garnish
5

Swirl and garnish

Spoon into a shallow matte bowl and drag the back of the spoon into a spiral. Finish with a drizzle of olive oil, a few pomegranate seeds and chopped walnuts for texture and color.

A No-Cook Miso Muhammara - Chill or serve
6

Chill or serve

Serve at room temperature, or make it a day ahead and chill so the flavors settle and deepen overnight. Six illustrated steps; pair with pita, cucumber or pepper strips.

Tips & Swaps

White miso, not red

White shiro miso is mild and sweet, lifting the dip without turning it soy-heavy. Red miso would overpower the peppers.

Make it a day ahead

The flavors deepen overnight in the fridge; just bring to room temperature and re-swirl before serving.

No pomegranate molasses

Use a little balsamic plus a pinch of sugar, or date syrup. It is there for sweet-tart balance, not the name on the label.

FAQ

Questions, Answered

Is muhammara a no-cook Christmas appetizer?

Yes. Beyond charring the peppers, there is no heat. Blend, season, swirl and serve. It is ready in about 10 minutes and can be made a day ahead, so it is an easy no-cook Christmas appetizer when the oven is busy.

How many calories are in muhammara?

About 110 kcal a serving, with 8 servings per batch. A spoon of white miso replaces part of the oil and pomegranate molasses, keeping it lighter than the classic version while adding umami.

What do you serve with muhammara?

Pita, cucumber strips, bell-pepper strips or warm flatbread. It also works on a holiday board next to the miso-sesame halloumi bites.

Is muhammara Middle Eastern?

Yes. Muhammara is a Levantine red pepper and walnut dip. We keep that identity and add a white-miso twist for a gentle Asian-fusion umami note.
