Cranberry Brie Bites

The Christmas bite with the highest visual payoff for the least effort. Puff pastry cups, a cube of brie and a spoon of cranberry sauce, baked until the pastry is gold and the cheese melts into a pool — three ingredients, about 20 minutes, almost impossible to get wrong. Red cranberry against golden pastry is the look everyone photographs first. Serve them warm as a festive finger food, and a full batch fills a platter that looks like you tried much harder than you did.

How to make it

The Recipe - Cut the pastry and brie
1

Cut the pastry and brie

Heat the oven to 200C / 400F. Cut 1 sheet of thawed puff pastry into 12 squares and press each into a mini muffin tin so the corners stand up. Cube 120 g of brie into 12 small pieces — the rind is fine and adds flavor, so leave it on.

The Recipe - Top and bake

Top and bake

Drop a brie cube into each pastry cup and spoon 1/2 tsp cranberry sauce on top. Bake 12 to 14 minutes, until the pastry is deep golden and the brie has melted into a glossy pool. The tops should look bubbling, not browned to a crisp.

The Recipe - Cool and serve

Cool and serve

Let them sit 3 minutes so the cheese sets slightly and the pastry firms enough to lift — straight from the oven they are too soft to handle. Serve warm, with a tiny rosemary tip on each for color.

Tips & Swaps

Make them ahead

Assemble the cups up to a day ahead and keep them covered in the fridge; bake straight from cold, adding 2 minutes.

Cheese swap

Brie is classic, but a mild camembert or a sharp cheddar cube both work in the same pastry cup.

Sauce control

Use a thick cranberry sauce, not a runny jelly, so it stays put instead of sinking into the pastry.

FAQ

Questions, Answered

Can I make cranberry brie bites ahead of time?

Yes — assemble the cups up to a day ahead and keep them covered in the fridge, then bake straight from cold with a couple of extra minutes.

What can I use instead of brie?

A mild camembert or a small cube of sharp cheddar both melt well in the same pastry cup.

Are cranberry brie bites gluten-free?

Not with standard puff pastry, which contains wheat. Use a gluten-free pastry sheet if you need them gluten-free.
